Majken Bech Bailey came to Ireland in 2014 to set up Aimsir restaurant with her husband Jordan Bailey, which was awarded two Michelin stars after just six months open. While Majken has since left the restaurant, her instinctive sense of a professional but relaxed service is a tribute to the time she has spent in a series of restaurants renowned for their polished but comfortable service. She also formerly worked in Oslo restaurants Bon Lio, ORO and three Michelin starred Maaemo where she also worked with her husband, and in Henne Kirkeby Kro in Denmark.
